Today we are going to get a little shrimpy, potatoey and cheesy! LOL Instead of sharing some complicated recipe, I wanted to stick to a simple one along the lines of the skillet sausage and zucchini recipe and the garlic butter pork chops recipe. With that said, I hope you are ready to learn how to make these shrimpy potato cheese kebabs.
I know I am not the only one who loves these simple kebab recipes. There’s a whole lot of goodness that goes into one skewer and that just brings an explosion of different flavors. I know the original recipe instructs you to make them in your oven, but I am ready to report that they taste even better when grilled on your outdoor barbecue. How do I know this? Well, I experiment (for you) of course. *grin*
Here’s What You’ll Need:
- 12″ skewers
- large raw shrimp, fresh or frozen
- mini or little potatoes
- salt
- grape tomatoes
- medium red onion
- halloumi cheese
- lemon
- cloves garlic
- cilantro
- thyme
- fresh parsley
- black pepper
- extra virgin olive oil
- baby romaine lettuce leaves or baby spinach mix
- medium saucepan
- bowl
- baking sheet
- non stick cooking spray
Start off by boiling the potatoes and ‘blanching’ them. Prep the onions and the cheese to add to the bowl with your cooled potatoes. The marinade is prepared next and then added to the potatoes mixture. Leave to marinate in your fridge for at least a day. The shrimp are marinated just before you thread and bake your skewers in the oven. They should be ready in less than 10 minutes, serve with your favorite leafy greens! 🙂
