If you love Thai food, you are definitely going to love this Thai green chicken curry recipe. There’s no IFs or BUTs about it, I know for a fact that you’re going to luuurv it! LOL. In earlier blog posts we made this spicy Thai noodles recipe, Thai red curry recipe this spicy Thai shrimp pasta recipe. Although both are super delish, I personally feel like this one is on another level of delish-ness.
There’s just something about Thai recipes, they usually activate all your taste buds, even the lazy ones. On a visit to a Thai restaurant a few years back, I discovered that Thailand has seven distinct Thai cuisines, which are mostly regional in nature. Don’t be discourage by the long list of ingredients below, it’s what makes this recipe worth your while. I don’t know if you can buy the curry paste ready made, but you know that homemade is always best.

Here’s What You’ll Need:
- green chillies
- spring onions (scallions)
- lemongrass stalks
- ginger
- garlic
- kaffir lime leaves
- lime zest and juice
- salt
- white pepper
- cumin
- ground coriander
- shrimp paste
- fish sauce
- coriander (cilantro)
- olive oil
- chicken breasts
- stock cube
- full fat coconut milk
- broccoli
- sugar snap peas or snow peas
- bamboo shoots
- light brown sugar
- boiled rice
- Thai basil leaves
- freshly chopped red chillies
- blender
- large skillet
- chopping board
- sharp knife
Okay, so we begin by making the curry paste in the blender. For the initial pulse session I add all the ingredients for the paste into the blender except for the coriander. The coriander is then added for the final session and when all the ingredients are fully combined, the paste is ready. Next, it’s time to fry the chicken in the skillet for at least 5 minutes.
When the chicken is cooked, you can then dump the paste into the skillet and cook for a few more minutes. Slowly add the rest of the ingredients, one by one as instructed by the recipe. The veggies are last to go into the skillet. Do not over cook them, they should still be crispy. When ready to serve, serve the chicken over the rice and top with your favorite garnishes.
