How To Freeze Cucumbers

Don’t you just hate it when you have a bumper harvest and end up with way more fresh produce than your family can consume? In earlier posts, we looked at how to build a diy wood pallet cucumber trellis , how to quick pickle cucumber and how to prune cucumbers. Let’s now tackle what to do with them once they leave the garden. In today’s post I’ll show you how to freeze cucumbers for long term storage.

What I love about the process of freezing fresh produce, is that it’s usually not complicated at all. For example, in this case, you don’t need any other ingredients in addition to the cucumbers themselves. If you have a whole bunch of them to process, it maybe faster and wise to use a slicer. I personally just do them in small batches, there isn’t enough space in our freezer to lay out more than two cookie sheets at a time.

Here’s What You’ll Need:

Step By Step Instructions

Step 1.

Wash your cucumbers.

Step 2.

Thinly slice your cucumbers.

Step 3.

Lay the slices in a single layer on a parchement paper lined cookie sheet.

Step 4.

Place the cookie sheet in your freezer for at least 1 hour.

When frozen you can simply slide them off the parchment paper into Ziploc bags for long term storage in your freezer. Do they still taste like cucumber? Yes, they’ll still taste like cucumber, although with a little less flavor. Are they not mushy? No, they’re not mushy but they will have a soggy soft texture. They are perfect for making cucumber water, smoothies and cold soups. Happy cucumber freezing! 🙂
