Usually when you hear something is ‘creamy’, you can immediately tell that it is going to be delicious. In earlier posts I shared this shrimp and avocado salad recipe, this pickled avocados recipe and this peach basil avocado skewers recipe. If like me, you love anything with avocado in it, you are definitely going to love this creamy avocado recipe.
When it comes to salad dressing recipes, I tend to like to keep it super simple. I prefer the ones with just a handful of ingredients and a few instructions. This particular one you can add different herbs and spices too, it all depends on your personal preference. It can be mixed with hard boiled eggs for a quick snack, in tacos, on seafood, as a salad dressing or as a dip too.
Here’s What You’ll Need:
- 2 avocados
- 2 tablespoons whole plain yogurt
- 1 teaspoon fresh lemon juice
- fresh cilantro
- fresh mint
- immersion blender
- sharp knife
- tablespoon
- small bowl
Step By Step Instructions:
Step 1.
Cut the avocados in half, remove the seed and then scoop out the flesh into the small bowl.
Step 2.
Add the yoghurt to the avocado in the bowl.
Step 3.
Add the fresh cilantro and the mint.
Step 4.
Use the immersion blender to blend, adding a little salt in the process.
Step 5.
That’s it! When blended you should end up with a nice creamy avocado dressing.
It’s best to enjoy this dressing whilst it’s still fresh. Having said that, you may find that 2 avocados produce way more than you need. In which case you can simply halve the quantities of the ingredients. Also if you do not have access to a immersion blender, your food processor will work just as well. Enjoy! 🙂
