What else can one do with avocados, if you don’t feel like making guacamole? That is often the dilemma around here when the avocado tree is ready for us to harvest its fruit. One of my favorite go to recipe has got to be this shrimp and avocado salad.
What I love about homemade salads is that they always fresh and healthy, especially when your garden has plenty of fresh produce. For much needed protein we are going to add some shrimp, this is what gives this salad that special something. If you do not have one or two of the ingredients do not sweat it, just use what you have available.

Here’s What You’ll Need:
- shrimp
- cucumber
- tomato
- small onion
- avocado
- lettuce
- salt
- pepper
- lemon
- cilantro
- butter
- large pan
- basil leaves
- chopping board
- large bowl
- sharp knife
Melt some butter in a large saucepan and saute the shrimp a few minutes on each side. Season with salt and pepper. Wash your vegetables before cutting and chopping them. Throw everything into the large bowl, add the shrimp and give your salad a good toss. Serve and add your favorite dressing or vinaigrette if you like. 🙂
