Potatoes, come to think of it, probably rank second when it comes to my starch favorites. With pasta coming in a very close third. That’s why when you search through this blog you’ll find posts on how to grow potatoes, this garlic herb roasted potatoes recipe and even this hasselback potatoes recipe. Let’s add on to the list with this spicy roasted red potatoes recipe.
Ummm, not very many people have a collection of potato recipes, somewhere in their kitchen. This particular one is very simple, just a short prep session followed by a seasoning session and then into the oven they go. When it comes to ‘spicy’ food, some of us like it mild and others prefer it on the hot side. Therefore, please feel free to add or remove spices from the seasonings, as you see fit.
Here’s What You’ll Need:
- red potatoes
- fire roasted tomatoes
- ground cumin
- chili powder
- garlic salt
- extra virgin olive oil
- baking sheet
- sharp knife
- chopping block
- small bowl
Simply wash and dry your potatoes. There is no need to peel them, you just chop them into small wedges. When laying them down on your baking sheet, make sure that they are in a single layer. I tend to mix the dry spices together in a separate bowl and then sprinkle over the potatoes. It usually takes a little over half an hour to bake the potatoes to perfection. Enjoy! 🙂
