I guess Sunday night dinners, are fast becoming a regular thing on this blog now. I mean in the past few weeks I have shared the Irish beef stew recipe and the chicken cordon bleu recipe . Today we shall be making the garlic herb roasted potatoes, uh huh!
I personally don’t know many people who like to roast their veggies, instead of cooking them. If you have never tried it, do it because you are missing out big time. What I really love about this recipe is that is a simple recipe, that you can pair it as a side dish with pretty much anything. That way it never gets old, and also gives you plenty of options.

Here’s What You’ll Need:
- baby red potatoes
- carrots
- olive oil
- fresh thyme
- fresh rosemary
- ground black pepper
- green beans
- garlic
- large bowl
- baking sheet
Since you will be roasting, the first thing you should do is preheat your oven to 400 degrees F. Then you can move on to tossing the potatoes, carrots olive oil, thyme and rosemary in the large bowl. Don’t forget to sprinkle some salt and pepper. Lay everything out on the baking sheet and roast for at least 20 minutes.
Add the green beans and olive oil to the bowl. Toss them together before seasoning with salt. Dump the contents of the bowl onto your baking sheet, throw in the garlic too and give everything another good toss, before spreading out on the baking sheet. Another 20 minutes in the oven, and the vegetables should be nice and tender with a slight tinge of brown. Ready to serve!
