Mini Pineapple Upside Down Cakes Recipe

I had a little extra time today, after spending most of the day in the garden. You know I love to bake when I have time, making things like the homemade chocolate eclairs recipe and the sticky toffee puding recipe. I have been wanting to try this mini pineapple upside down cakes recipe for a while.

These simple dessert recipes, have really been a life saver over the years. When you look at the long list of ingredients, you may think this a complicated recipe, but it is not. It just that there is 3 parts to it. Also if you are not a fan of alcohol in your food, then feel free to substitute the rum with some vanilla extract. Either way you get your mini upside down cakes.

Here’s What You’ll Need:

Before mixing your ingredients you can preheat the oven and prepare the muffin tin, so that they are ready when you are done. In one bowl you will whisk in all the wet ingredients, including the pineapple juice. In the other bowl you sift the dry ingredients together.

Next, you slowly add the dry to the wet and then set that aside so you can make the topping. The topping is made in a small sauce pan over medium heat. When ready, you can start assembling the cakes. The topping goes in first, followed by pineapple rings with a cherry in the middle and then the batter. Bake in the oven for a little over 20 minutes.
