The lord knows that like most women out there, this girl (me) sure does love all things chocolate. This is why recipes like the homemade cocoa mix and the homemade chocolate fudge cake recipe are some of my favorites. There are more to come, but for today let us look at this homemade chocolate eclairs recipe.
If you are still buying your chocolate eclairs, you need to stop right away. Once you make these using these readily available ingredients, you will never want to buy them again. That is just how good they are. If you want to be fancy, you could use white chocolate chips instead of the dark chocolate ones. I have seen some others, which actually combine the two by simply drizzling the other on top after dipping the eclair into the other. Are you ready to make these?

Here’s What You’ll Need:
- sugar
- flour
- salt
- milk
- egg yolks
- vanilla
- butter
- heavy cream
- water
- eggs
- semisweet chocolate chips
- shortening
- saucepan
- baking sheet
- parchment paper
- medium pan
- piping bag
Let’s begin by making the filling, in a small bowl, beat your egg yolks and then set them aside. Then add you salt, flour, and sugar to the saucepan and whisk everything together, before adding the milk followed by the egg yolks. Bring to a boil, whilst continuously whisking away. When the filling resembles pudding, you can remove from the heat and add your vanilla and butter.
After the filling has cooled you can then add your whipped cream. Next you’ll make the pastry shells which the mixture is pipped onto the prepared baking sheet and baked for about 40 minutes. The topping is made by melting the chocolate chips and combining the two in a your microwave. Now you can go ahead and assemble your eclairs, with the cream pipped into the shell, which is then dipped in the topping. Yummy! 🙂
