Every delicious meal, requires an even more delicious dessert, right? I have shared a few dessert recipes before on this blog, such as the mini french silk pie recipe and strawberry cobbler recipe. Today we will be adding on to the list with this lemon meltaways recipe.
If you are all for easy dessert recipes, then you are in luck. This recipe is not only easy to make, it is also not too sweet. I love how the buttery cookies melt in your mouth, and that subtle hint of lemon. This recipe calls for 7 ingredients, and if it wasn’t for ‘dough’ waiting time, you could easily whip a batch up in less than 30 minutes.
Here’s What You’ll Need:
- unsalted butter
- powdered sugar
- lemon zest
- fresh lemon juice
- unbleached all-purpose flour
- cornstarch
- salt
- stand mixer
- small mixing bowl
- plastic wrap
- parchment paper
- baking sheet
Cream the butter and the sugar. You can use the stand mixer if you have one, or do it the old school way in a mixing bowl with a wooden spoon. The lemon zest and the juice go in next and are blended into the butter and sugar. The other dry ingredients are combined in a separate bowl, and then slowly mixed into the creamed mixture.
Leave your cookie dough covered with plastic wrap in a small bowl, in your fridge for about an hour. Meanwhile prepare your baking sheet by lining it with parchment paper. Scoop small balls of dough and flatten them to make small discs. Bake in for about 15 minutes, using that time to quickly make the glaze for the cookies. Wait for the cookies to cool, before drizzling on the glaze.
