Oh, yeah! You know that’s how we roll, on this blog. Forget chocolate chip cookies, everyone and their mother knows how to make those. Instead, today I will be sharing my favorite chocolate chip cookie cake recipe. Actually, it’s been a while since we last explored baking on here. If my memory serves me right, the last thing we baked was the chocolate fudge cake recipe or was it the mini pineapple upside down cakes recipe? Hmmmm!
This is actually one of those layer cake recipes, that give you more cake per slice than you can fit in your tummy. The layer with the most weight in this whole cake is the cookie layer, of course. Having said that I also have to acknowledge that brown sugar butter cream within those layers. Mmmm. There is a little rum in there too, for the alcoholics. However, vanilla is a great substitute for those who may prefer the non-alcoholic version. Time wise, budget about 2 and a half hours for this delicious cake.

Here’s What You’ll Need:
- butter
- granulated sugar
- brown sugar
- large egg
- vanilla extract
- all purpose flour
- baking soda
- salt
- mini chocolate chips
- water
- vanilla butter cake
- Italian meringue buttercream
- molasses
- simple syrup flavored with dark rum
- chocolate ganache
The first order of business is to bake everyone’s favorite layer, the cookie layer. Whilst that is baking in the oven for about 20 minutes, you can use that time to make the other cake layers. When done with the cake layers, you can move on to making the Brown Sugar Buttercream and then finally the rum syrup. With all your layers ready, the intricate assembly process can commence. Actually, just follow the step by step instructions, you shouldn’t have any problems at all.
