Spicy Pickled Pineapple

Most people like their pineapples just as sweet as they are. However they are some of us who have discovered things such as spicy pickled eggs and pickled shrimp, that would prefer them prepared differently. Have you ever tried spicy pickled pineapple? OMG, you have to try this.

I really don’t know how many pineapple recipes, you have in your collection. What I know is that this particular one deserves to be in there too. Maybe you can wait until pineapples are in ‘season’ to try this, but whatever you do make sure that you at least try it. Forget the fancy rice vinegar, you can still get similar flavors when you substitute it.

Spicy Pickled Pineapple Recipe

Here’s What You’ll Need:

  • pineapple
  • white vinegar
  • fresh citrus juice
  • sugar
  • jalapeno
  • kosher salt
  • limes
  • cilantro
  • Nakano citrus seasoned rice vinegar (optional)
  • small sauce pot
  • wide mouth jars

Since I don’t have the citrus flavored rice vinegar she recommends, I set out to mix the the fresh juice in with the white vinegar in a separate bowl. Only then was I ready to make the ‘sauce’ in the sauce pot. Make sure you cut the pineapple into manageable sizes, or use a wide mouth jar. Allow to pickle for at least 24 hours before tasting, although the longer you let it pickle the better the taste.
