Quick Pickled Cauliflower Recipe

Sometimes you just want to pickle your fresh produce from the garden, I get that. That is why I have shared this pickled radishes recipe, this pickled red onions recipe as well as this this spicy pickled pineapple recipe in previous posts. In today’s post, I have decided to show you how to pickle cauliflower, that you have picked fresh out of your garden.

This is one of the easier pickling recipes and no specialized equipment is required. Besides the cauliflower, the recipe calls for eight other ingredients, most of them are spices though. As always feel free to substitute or completely leave out any spices you may not fancy. I generally like this spice combination as it gives the cauliflower a nice zesty taste. This recipe makes one pint jar, double or triple the quantities as need be.

Here’s What You’ll Need:

2 1/4 cups distilled vinegar
1 head of cauliflower
1 cup granulated sugar
1 tbsp salt
1 teaspoon mustard seeds
1 teaspoon coriander seeds
1 teaspoon ground turmeric
1/2 teaspoon cumin seeds
1/2 teaspoon chili flakes
bowl
saucepan
sterilized jar

Step By Step Instructions

Step 1.

Use your hands to break the head of cauliflower into florets and drop them into the bowl.

Step 2.

Sprinkle the salt over the cauliflower, cover the bowl and leave overnight.

Step 3.

After washing and drying the cauliflower the next morning, add the sugar, vinegar as well as all the spices into a saucepan.

Step 4.

Turn on the heat and bring to a simmer, continuously stir to dissolve the sugar.

Step 5.

Stuff your cauliflower into the sterilized jar and then pour the contents of the sauce pan over it.

Step 6.

Seal the jar and leave it in a cool dry place for at least 7 days.

That’s it! Now all that is needed is a little patience as you wait for the cauliflower to pickle over a week or so. When it comes to serving, you can try mix it with a mild mustard. You’ll end up with a delicious picalilli style pickle. Otherwise you can just open your jar and enjoy as it! 🙂
