How To Freeze Fresh Beets

When God gives you the gift of beets, you accept and figure out how best to deal with the surplus. After sharing as much of them as possible with family as well as friends, you can pickle some beets in your kitchen. Perhaps make some for dinner and lunch, the rest I suggest you try your hand at freezing fresh beets.

Although beets generally taste better when pickled and or canned, you can still preserve them by freezing them. It helps that the process is not complicated at all, and does not require any special equipment. It only takes about an hour or two, to complete a batch. Most of the time you could be doing other tasks around the homestead, whilst you wait for the beets to ‘blanche’.

Here’s What You’ll Need:

  • fresh beets
  • large pot
  • water
  • large tray
  • ziploc bags
  • marker
  • drinking straw (optional)

Step By Step Instructions

Step 1.

Pour some water in your pot and
bring it to a boil.

Step 2.

Meanwhile wash and clean your beets.

Step 3.

Grab your beets by the root and
gently drop them in the boiling water.

Step 4.

Boil for about 75 to 90 minutes or
until they are fork tender.

Step 5.

Remove them from the pot onto a
large tray and allow them to cool down.

Step 6.

Use a sharp knife to cut of the stems
and the root ends.

Step 7.

Peel the skin off, using your fingers.

Step 8.

Pack your beets into ziploc freezer bags
which are labelled and dated.

Step 9.

Zip the bag about 95% of the way, insert
a straw and suck out all the air before
removing the straw and sealing the bag.

Step 10.

Store the bags in your freezer.

When freezing your beets, make sure that you leave some of the stem and the root on the beet, this helps reduce the bleeding when you boil them. When it comes to packing them, you have the option of either leaving them whole or you can cut them into slices, halves and quarters. Slices save more space and make the bags easier to pack in your freezer. 🙂
