In an effort to free up some freezer space, I decided to make something for dinner that used up some of the frozen mango slices in there. Everybody loves chicken, remember the Vietnamese style baked hicken recipe and the huli huli chicken recipe I have already shared in previous posts. Today’s dinner menu was this mango BBQ chicken with mango salsa and rice.
When it comes to chicken recipes, I tend to prefer the barbecue, roasted or the grilled ones. This particular super easy recipe is special in that it incorporates a lot of healthy fresh ingredients, making it not only delicious but super healthy as well. Instead of using white rice, most times I like to make the healthier brown one. Dinner will be ready in about 35 minutes.
Here’s What You’ll Need:
- avocado
- mango
- blood orange
- red onion
- cilantro
- jalapeño
- salt
- pepper
- raw Jasmine rice
- boneless skinless chicken breasts
- BBQ sauce
- chopping board
- sharp knife
- medium bowl
- sealed plastic bag or container
There is essentially 3 components to that constitute this recipe. We have the mango salsa, the BBQ chicken and then the rice. Wash and prep all your fresh ingredients as instructed in the recipe. The salsa is simple, just mix all the ingredients in the bowl, and your salsa is ready.
The chicken will need to be marinated for at least 4 hours, however for the best flavor it is best to leave it overnight. When the chicken has marinated you can then go ahead and grill it. The rice can be cooking at the same time, so that it is ready to serve then the chicken is done.
