How many ways are they to cook a chicken? Well, too many if you ask me. LOL However, that is exactly why I love chicken dishes. We have already looked at the grilled huli huli chicken recipe and the chicken feta pasta recipe, in previous posts. Those are definitely still family favorites. But these days, there is this vietnamese style baked chicken recipe, that we all can’t seem to get enough of.
Thank goodness, the recipe itself is simple. Just about 15 minutes or so for prep work, followed by a marinating session and then the baking for about 35 minutes. The only annoying thing, is sometimes it is difficult to find some of the recipe specific ingredients such as the palm sugar and the sambal oelek. In which case, I just substitute with whatever else I have available for example for palm sugar, you can use brown sugar.

Here’s What You’ll Need:
- chicken thighs
- soy sauce
- Asian fish sauce
- palm or dark brown sugar
- fresh ginger
- hot chili-garlic paste (sambal oelek)
- fresh lime juice
- lime zest
- garlic cloves
- fresh cilantro leaves and tender stems
- grapeseed or other neutral oil
- sliced limes and cilantro leaves
- baking sheet
- aluminium foil
- cooking thermometer
The secret to this recipe is the marinade, which is made by whisking together all the ingredients except the sliced limes and cilantro leaves. The marinating occurs in the ziploc bag and for me I let the chicken sit in there for about an hour max. The baking itself should be about 35 minutes, but use the thermometer to make sure your chicken is cooked. Serving suggestions, goes well with rice, potatoes, a green salad or even just some steamed veggies! 🙂
