Never mind that these look all shriveled up and super ugly, they still taste like heaven. Obviously when we start talking about dehydrating pumpkin, dehydrating ginger and dehydrating grapes our main goal is preservation. Instead of allowing them to over ripen and eventually throwing them away, let me show you how to dry your cherry tomatoes.
When it comes to the many different tomato varieties we’ve tried growing in our garden, these little juicy cherry ones have since been allocated their own little corner. I mostly use them in salads, but sometimes they may find themselves in stews and soups too. The main recipe below is what I would call the ‘fancy’ version, if you keep reading you’ll find the ‘simplified’ three ingredients only version. Also instead of storing the dried cherry tomatoes in jars, you can use ziploc bags and pop them into your freezer.
Here’s What You’ll Need:
- cherry tomatoes
- 1/2 cup olive oil
- 2 cloves garlic
- 1 teaspoon oregano
- cookie sheet
- sharp knife
- cutting board
- mason jars
- parchment paper
- small bowl
- ziploc bags (optional)
- salt and pepper (optional)
Step By Step Instructions
Step 1.
Preheat your oven to 176 degrees F.
Step 2.
Combine the olive oil, garlic and oregano in a small bowl.
Step 3.
Slice your cherry tomatoes into half and place the halves on your parchement paper lined baking sheet.
Step 4.
Season your tomatoes by drizzling the olive oil dressing over them.
Step 5.
Place the tray in your oven and bake for about 6 to 8 hours.
When the cherry tomatoes are dry, remove the tray from the oven and allow them to cool down. When cool pack them in the mason jars and top up with olive oil before screwing on the lids.
Method #2: Alternatively, you can just simply slice your cherry tomatoes, place them on the parchment paper lined baking sheet and then sprinkle some salt to season. Dry them in your oven for 2 to 3 hours at 194 degrees F. When dry store in an air tight container or ziploc bag.
