Bonjour! LOL. That right there is 20% of my current French vocabulary. But that will not stop me from exploring French Cuisine… Non! I have already shared this French apple jam recipe and this Mini French silk pie recipe in previous posts. I recently discovered this French chocolate bread recipe and was very happy with results from my very first attempt.
If you know anything about bread recipes, then you’ll know that most of them are not only a bit complicated but also time consuming. If you are familiar with the more popular ‘Pain Au Chocolat”, this is not it. As shown in the list below, only 7 ingredients are required for this one. Instead of using the fresh yeast, active yeast can be substituted. When it comes to the bread flour try using the whole wheat variety, for better tasting and healthier bread.
Here’s What You’ll Need:
- bread flour
- ripe (100% hydration) starter
- cocoa powder
- fresh yeast or active dry yeast
- filtered water
- sea salt
- dark chocolate
- large mixing bowl
- stand mixer (optional)
- baking stone
- cookie sheet
- parchment paper
- kitchen towel
- water
- baker’s blade or a sharp knife
Alright, before we get started it is important that you know that making this bread is going to be a 2 day process. On the first day you will make the dough by mixing in all the ingredients with the chocolate being last to go in after you’ve kneaded the dough. On the second day is the fermentation process which takes about 8 to 12 hours. When the dough has doubled in size, it’s time to shape the loaves and pop them into the pre-heated, steaming oven.
