Quick question for you? What do you do when Fall comes along and some of your tomatoes are still green? Well I have shown you in an post how to ripen green tomatoes, but there is actually more you can do with them. For instance, you can give this fermented green tomatoes recipe a try.
I still don’t get those people who think that fermenting recipes, are difficult. Seriously, when compared to canning these are just a walk in a park. No special equipment is required, just a jar and a few ingredients readily available in most kitchens. You can either choose to use whey or spend more money purchasing a culture starter. Also make sure that the water you use has not been treated with chlorine.
Here’s What You’ll Need:
- green tomatoes
- garlic
- peppercorns
- fresh dill
- kosher, pickling or sea salt non-iodized
- whey or culture starter (optional)
- non chlorinated water
- quart mason jar
- weight
- tea towel
- rubber band
Wash your tomatoes before you slice them into chunks that can easily fit in your jar. You pretty much add everything else into the jar, including the water which goes in last. You can either give the jar a good shake to mix everything or just use a spoon to stir.
Instead of using a screw on lid, use the rubber band and tea towel to cover the jar. The tomatoes should be ready within a week, after day 4 you may want to start tasting them everyday until your taste buds are satisfied.
