Sometimes, just sometimes the menu calls for a fresh salad and it is always best to have choices. I have already shared the steak fajita pasta salad recipe, the balela salad recipe as well as the shrimp and avocado salad recipe in previous blog posts. Well, you can now add this easy Asian cucumber salad recipe to the list too.
The ultimate goal is to have a huge database of salad recipes, that way you will always have the perfect salad for any occasion. The easier the salad is to make the better, just like this one. Make sure that you use fresh ingredients, preferably straight out of your garden. The best type of cucumbers to use are probably the mini cucumbers, however any seedless cucumber will do.
Here’s What You’ll Need:
- seedless cucumbers
- red onion
- red pepper
- rice wine vinegar
- honey
- sesame seeds
- toasted sesame oil
- red pepper flakes
- sea salt
- food processor
- medium bowl
- small bowl
Once again we are dealing with fresh produce, so we have to make sure that you wash and dry it well before you get started with the prep work. If you are a trained chef you probably can thinly slice any vegetable, however for the rest of us it may be wise to cheat and use one of the many available electronic appliances.
The cucumber, red onion, red pepper and sesame seeds all go into one medium size bowl. Then you will need a separate small bowl to mix the rest of the ingredients to make the dressing. All that is left to do is combine the two. I always leave it in the fridge for at least an hour before serving, trust me it tastes way better that way. Enjoy! 🙂
