Fermented Spicy Sweet Potatoes

When I first started growing sweet potatoes, this is probably the last thing I would have dreamed off every doing with them. But alas, after being hooked to fermented stuff after fermenting lemons and fermenting fresh berries, I just had to give these fermented spicy sweet potatoes a try. Hey, you only live once.

Seriously, of all the sweet potato recipes, out there. Why would one want to ferment them? Why not, I say? You do not need any specialized equipment, however it sure does makes life a whole lot easier. I love to enjoy straight out of the jar, but I hear you can enjoy it with your grilled meats or fish, as a side dish too. I am still to try that, but will definitely get to it one of these days.

Here’s What You’ll Need:

A little prep work is required before we can begin the process. Prep the ingredients as instructed by the recipe and then you can start making the brine in a large bowl. The brine is made from mixing the sweet potatoes, ginger, jalapeno and onion. It should be read within 20 minutes, after which you can transfer everything to your fermentation jar.

Make sure you push the veggies down, to allow the brine to fully cover them. The fermentation process itself should take anywhere between 5 to 10 days, it all depends on how you like it. The jar should always be kept in a cool area during fermentation. When ready, you can store it in your fridge, and enjoy as desired.
