Have you every had one of those days when you are just craving some chicken? LOL Yeah, I know I am weird like that, don’t judge me. I also didnt want to make the spinach stuffed chicken recipe or the mango bbq chicken recipe. Instead I wanted to try this chicken thighs with mushroom sauce recipe that my good friend Suzie emailed me the other day.
You know I am going to tell you to add this to your collection of chicken recipes. Not only is it delicious, it is also low in carbs and perfect for those on the keto diet. The annoying thing is if you are getting your chicken from the homestead, you may have to slaughter a few to end up with enough thighs. Luckily I picked up some at our local farmers market, sometime this Summer.
Here’s What You’ll Need:
- boneless skinless chicken thighs
- lemon juice
- garlic cloves
- dried thyme
- rosemary
- salt
- cracked black pepper
- olive oil
- fresh mushrooms
- fresh parsley
- dried thyme
- dried rosemary
- heavy cream
- nutmeg
- salt
- black pepper
- Parmesan cheese
- paper towel
- sharp knife
- large pan or skillet
Before seasoning the chicken with the lemon juice and salt, you wanna make sure that the thighs are dry and you’ve removed all the fat. Then you prepare the garlic, thyme, rosemary and pepper coating for the chicken. Pan sear the thighs in the pan and then transfer to a plate.
You are going to use the same pan to saute your mushrooms. Add all the other ingredients for the sauce. The dry ingredients go in first except for the nutmeg, which goes in after the heavy cream but before the Parmesan cheese. When the sauce has thickened enough, you can return the chicken to the pan. The parsley makes the perfect garnish, with some Parmesan cheese too.
