Canning Mint Jelly

The last thing I would have thought of when I started growing spearmint was that I would be using it for canning mint jelly. Oh well, I am not really complaining I love canning stuff. From canning homemade V8 juice, canning asparagus and even canning glazed carrots recipe. Now mint has just joined my elite club of stuff that I can.

For this recipe, we will be using your water bath canner, now would be a good time to dust it off. The recipe also calls for a whole bunch of mint, therefore it would be wise to wait until you have a lot to harvest before you try this one. When all is said and done you should have about 3 pints or 6 half mints of jelly to enjoy.

Here’s What You’ll Need:

As with each canning recipe, begin by washing and sterilizing your jars, lids as well as the rings. I found out that if you get the water bath canner started whilst preparing the jelly as directed by the recipe, you save yourself some valuable time. I tried to cut corners once, by not chopping the leaves, what a disaster. Don’t do it! LOL

When the jelly is ready, you can move on to the fun canning process. This involves using the ladle to pour the jelly into the jars. The jars will be processed for up to 10 minutes. When done, remove from the canner and allow them to seal on your kitchen counter or table. Sometimes the jelly may take a few hours or even days to set, be patient as long as your jars are sealed.
