Sometimes, it is good to switch from ordinary rice to a ‘fancier rice’. Like this easy Spanish rice recipe, which goes well with most Mexican dishes. I often make it when I make the Mexican Style Street corn or the BBQ grilled shrimp skewers recipe. Besides, it is a side dish, you can make with pretty much any other meal.
From the name, you are probably thinking that this is a Spanish recipe, right? Well you would be so wrong, it is actually a Mexican recipe and is pretty much the same thing as the Mexican rice. The name difference just depends on who is talking about it. The prep time for this recipe is about 15 minutes, with an additional 20 minutes cooking time.

Here’s What You’ll Need:
- vine ripened tomatoes
- white onion
- garlic cloves
- jalapeño
- tomato sauce
- olive oil
- long grain white rice
- chicken broth
- salt
- limes
- cilantro
- blender
- heavy bottomed pot
After chopping and prepping your veggies, the first thing you have to do is process them in your blender. The onion, jalapeno, garlic, tomatoes as well as the tomato sauce should be blended to a smooth paste. Meanwhile set the pot on medium high heat, with the rice and oil in there.
In just a few minutes your rice should start to turn golden and look toasted. That is the perfect time to throw in the puree you just made, as well as the broth and a little salt seasoning. All that is left to do, is to bring to a boil and cook covered on low heat for at least 20 minutes. The cilantro and the lime are for garnishing, this recipe serves 6 people.
