Canning Homemade V8 Juice

Yeah, I know you could had a V8 instead of reading today’s blog post, huh? LOL You probably can tell how much I love my tomatoes from the number of posts their featured in. From homemade tomato paste, making homemade tomato powder and even the infamous homemade ketchup recipe. Would you like to learn the subtle art of canning homemade V8 juice, today?

The good thing about this recipe, is that you can select the cocktail of vegetables that you want to use. If you like it spicy you can even through in some peppers or jalapenos. However, since we are using a water bath canner there ratio of tomatoes to other veggies should always remain at 7:1. I am sure you can also make the juice using whichever tomatoes, you have readily available to you.

Here’s What You’ll Need:

As usual, give your vegetables and fresh produce a good wash before you start chopping them. There is no need to peel the tomatoes, but feel free to do so if you really do not like the skins. Leave the tomato and veggie mixture to simmer of the medium heat for at least 20 minutes. Use that time to wash, sterilize your canning equipment, jars, lids as well as rings.

The food mill is the secret time saving kitchen apparatus for this recipe. It helps you separate the tomato juice from everything else. Or you could just manually do it using a strainer. The juice has to be boiled again before packing it into the jars, and then processing in the water bath canner for about 40 minutes. When sealed, it is possible to store the jars for a year or so. 🙂
