Yes. Just like you, I am still curious to know how they came up with this name. LOL. We have been growing jalapenos in our garden for a couple of years now. Usually we just use them to give our recipes a little spicy kick. That is why I was really excited when I discovered this canning candied jalapenos recipe.
Be careful, this may become one of your favorite jalapeno recipes too. Besides the peppers, you are going to need 6 other readily available ingredients. For the canning section, this is a job for your water bath canner. Total cook time including prep will be slightly less than an hour. Expect at least 7 half pints of ‘cowboy candy’, they maybe a little extra leftover.
Here’s What You’ll Need:
- jalapeños
- cider vinegar
- white sugar
- turmeric
- celery seed
- granulated garlic
- ground cayenne pepper
- kitchen gloves
- large stock pot
- slotted spoon
- canning jars with lids
- canning utensils
- water bath canner
- kitchen towel
Wash your jalapenos and then dry them before you begin the job of slicing them into 1/4″ slices. Meanwhile you can put the other ingredients in the stock pot and bring them to a boil before leaving the mixture to simmer for at least 5 minutes. The jalapenos are then added to the pot and left to simmer for at least another 4 minutes.
Make sure you are using washed and sterilized jars. Pack them with jalapenos, leaving about a 1/4 inch head space. The syrup should be boiled yet again before being ladled into the jars. Wipe the rims and screw on the lids. Process in the water bath canner for 10 to 15 minutes depending on the size of your jars. Sealed jars must be stored in a cool dry place for at least 60 days before you can enjoy the contents. Trust me, patience is a virtue. 🙂
