Sweet Potato & Black Bean Stew

Some days it is good to make a healthy vegan meal for dinner. Since we are growing a lot of veggies in the garden we can make meals like the vegan lentil chili recipe or healthy vegan khao soi soup recipe. This sweet potato and black bean stew recipe is also a great alternative.

We are all familiar with the health benefits of sweet potatoes, right? Instead of relying on meat for protein, the black beans will do that instead. If you do not have black beans, you can use lentils instead. Same goes for the sweet potatoes, butternut squash is a great substitute. Not only is this a vegan recipe, it is also gluten free, dairy free, egg free and refined sugar free.

Here’s What You’ll Need:

Prep the sweet potatoes and red onion as instructed in the recipe. In the large pot you want to heat olive oil and use it to fry the garlic and the onion. Don’t forget to season with salt and pepper. All the spices are then added, followed by the sweet potatoes. The rest of the ingredients are added and everything is brought to a boil for almost half an hour. The spinach or kale is the last to go in just before the pot is removed from the heat.
