I find that vegan soup recipes, tend to be easier to make. Although you usually have a long list of vegetables that have to me washed, peeled, diced or chopped. At the same time you can pick and choose your favorite vegetables to use depending on what you have available. Besides that this recipe is very flexible, in that they are several options when it comes to the ingredients that you can use.
Here’s What You’ll Need:
- red chillies
- garlic cloves
- ginger
- coriander stalks
- lemongrass stalks
- shallots
- coriander seeds or ground coriander
- turmeric
- curry powder
- noodles
- broccoli
- butternut squash
- flat green beans
- oil
- vegetable stock
- full fat coconut milk
- vegan fish sauce or tamari / soy sauce
- lime juice
- sugar
- fresh coriander (optional)
- pestle and mortar
- herb chopper or food processor
- baking sheet
- cutting board
- sharp knife
It is the paste that makes this soup, so it only makes sense that you start preparing that in your food processor. When it comes to the veggies, the easy way to cook them is in the soup. However they if you opt to grill them in your oven first, you will be rewarded with tastier veggies. Make your noodles just before serving the heart warming soup in heated bowls. Mmmm, yummy! 🙂
