This is the reason why I insist on growing several different tomato varieties in our garden every year. You can use one for canning tomato juice, another for making homemade ketchup and the other for making this tasty roasted italian tomatoes recipe.
Although I tend to really enjoy the fresh tomato recipes, I don’t have issues with having them cooked sometimes. These roasted ones will make for a great snack or appetizer. The addition of the fresh herbs, enhances the flavor. Don’t worry if you do not have Roma variety, you can still use any available tomatoes to make these. Make sure you try these, very delizioso!
Here’s What You’ll Need:
- roma tomatoes
- olive oil
- garlic
- sweet onion or Vidalia onion
- Italian seasoning
- pink Himalaya sea salt
- sugar
- pepper
- oregano, thyme, rosemary and chives
- cookie sheet
- parchment paper
- cutting board
- mixing bowl
Wash your tomatoes and then cut them into halves on your cutting board. The easiest way to coat your tomatoes is to throw them into the mixing bowl, with the garlic, olive oil, seasoning, salt as well as pepper and mix well. Then you can place them onto the parchment paper lined cookie sheet, sprinkle the fresh herbs and bake in the oven for at least an hour.
