Why on earth would you want to preserve lemons? Well, maybe because you can! LOL. I have already shown you how to make homemade black lemonade and also how to can fresh lemons. This preserved lemons recipe, could be mistaken for the later but it is a slightly different process altogether.
For this recipe, I would recommend that you stick to organic lemons only. This will ensure that you only have pure, healthy preserved lemons at the end of it all. I have never tried using ordinary course salt, but you may want to experiment with a jar and see how that turns out. I would imagine that there will be any noticeable difference. I maybe wrong, but I doubt it. So yeah, you are only going to need two ingredients for this recipe.
Here’s What You’ll Need:
- organic lemons
- coarse kosher salt
- vegetable or nail brush
- mason jars
- fresh lemon juice (optional)
You want to make sure that your lemons are scrubbed clean before you begin the whole process. Each lemon has to be cut using the star cutting technique, so that you can then pack the salt into the star. Then next you pack the the lemons tightly into jars, squeezing them so that they release the juice. Ultimately they should be covered in juice, a top up with fresh lemon juice maybe necessary. Your lemons will be preserved and ready for use in about 30 days.
