Pickled Cherry Tomatoes Recipe

Everybody loves those little buggers, I don’t know what it about them but we love them. I am talking about the cherry tomatoes, that I recently published a post about on this blog. Unlike the indigo rose tomatoes, besides using them in your daily cooking you should also try this pickled cherry tomatoes recipe.

There are many different varieties of cherry tomatoes, such as the Sungold and the Black Cherry tomatoes. If you have all of these available, you certainly can pickle them all at once. I like the mix and match colors in addition to the flavor. When pickled you can enjoy them as an appetizer or in your salads. I try to resist the urge to snack on them, but once I start there goes a whole half pint jar. That is just how tasty they are. LOL

Here’s What You’ll Need:

Since you will be using jars, it is important that you wash them and sterilize them. The easiest way is to use the water bath canner or you can just use a large stock pot with boiling water. One lazy day, I decided to skip the process of making a small hole in each of the tomatoes. Don’t do it, the flavor is not the same.

The pickling ‘juice’ is made by combining the vinegar, tarragon, mustard seeds, lemon or lime juice, sugar, salt and red pepper flakes. Once that is ready, you can start preparing the jars by following the instructions in the recipe. The jars will need to be processed in your water bath canner for about 10 minutes, in order to seal them. I leave mine on the kitchen table overnight!
