When life gives you plenty of lemons make some lemonade. Remember that recipe for the healthy black lemonade I shared with you a little while back? Or you can perhaps make the simple fermented  lemonade, that will do too. In the fortunate case that you are left with more lemons, why not learn how to can fresh lemons and preserve them for later use.

For those of us who have canned any citrus, you will be happy to know that the method is the not same. However, you will not be using any of your specialized canning tools, for this recipe. Pretty much the jars are all you will need. With this in mind don’t expect to have your lemons lasting for longer periods of time. These jars can be stored in your fridge for up to 4 weeks or so.

Here’s What You’ll Need:

• fresh lemons
• sugar
• water
• mason jars
• sharp knife
• cutting board
• large pot (optional)

Even with this recipe, your jars have to be squeaky clean and sterilized. Washing thouroughly with warm soap water works just as fine. Although sometimes I just boil them in a large pot filled with water, its usually involves less work. The lemons also have to be washed before you can start cutting them into halves and then slices. Instead of slices, some people just cut the halves into 4 or 5 quarters.

Packing in the jars begins with the lemons on the bottom, then a teaspoon of sugar and then another layer followed by the sugar, until we reach the top. I was worried the first time that I was putting too much sugar, but was pleasantly surprised. Screw on your lids after you have packed your jars and transfer them to your fridge for storage. Next time you make a cup of tea or are making your favorite fish recipe, just grab a slice or two from the jars.
