Mediterranean Potato Hash Recipe

I really love to try recipes from different parts of the world. It helps to keep family meals interesting. In previous posts I have shared the Mongolian beef ramen noodles recipe, the Greek chicken feta pasta recipe and the creamy Swedish meatballs recipe. Today’s post will feature the Mediterranean Potato Hash recipe, one of our favorite breakfast recipes.

Surprisingly enough, even though there is a long list oh healthy veggies this recipe takes less than half an hour to make. Most of the veggies can be replaced with whatever you have in your garden or is in season. I think the only thing I would not replace in this recipe is the feta and of course the potatoes. This recipe is pretty much, throw everything in the skillet and stir! LOL

Mediterranean Potato Hash Recipe

Here’s What You’ll Need:

  • olive oil
  • yellow onion
  • garlic cloves
  • russet potatoes
  • salt and pepper
  • chickpeas
  • baby asparagus
  • ground all-spice
  • za’atar
  • dried oregano
  • paprika or hot paprika
  • coriander
  • sugar
  • poached eggs
  • water
  • white vinegar
  • red onion
  • Roma tomatoes
  • crumbled feta
  • fresh parsley
  • large skillet
  • chopping board
  • sharp knife
  • medium saucepan
  • kitchen towel

In your skillet heat the olive oil. With your heat at medium high start adding the potatoes, onions and the garlic. Add some salt and pepper to season and leave to cook for at least 5 minutes. Keep stirring until your potatoes become tender. Ideally you want as many of them as possible to get that golden brown crust.

With the potatoes cooked it is time to add the remainder of the ingredients and spices. After cooking for another 5 minutes or so, you can then turn the heat to low. Heat some water in a saucepan and then add the vinegar. Poach your eggs, we all have different ways of doing it. To serve, add the red onions, feta, parsley and tomatoes to the hash with the poached eggs placed on top. Breakfast is served! 🙂
