When Summer comes along, I always try by all means to make and enjoy as many Summer recipes as possible. You only have a few short months so take full advantages. It is the time that we start enjoying more of the homemade ice cream, the homemade vitamin water and the homemade fudgesicles. Another one of my Summer favorites, that I would like to share with you is this fizzy pineapple punch recipe.
If a doctor was to prescribe something to cool you off during those hot Summer days, this would be it. This vitamin C enriched brew, is not only refreshing but also healthy. You can pretty much add any type of fresh fruit you want in there including strawberries raspberries, blueberries, oranges, limes, and pineapple. For those of us who would like a little more kick, then a splash or two of your choice of alcohol will definitely do the trick.

Here’s What You’ll Need:
- frozen pineapple juice concentrate
- frozen limeade concentrate
- cold water
- club soda
- assorted fresh fruit
- fresh mint
- large pitcher
I know the recipe calls for frozen concentrate, but whenever I have an abundance of fresh fruit available I prefer to make fresh fruit juice and use that instead. Also you can control the amount of fizz, by how much of the club soda you add to your punch. When it comes to the fresh fruit, my suggestion is go crazy. Throw in everything but the kitchen sink, whatever you have available at the time.
Remember above, I mentioned adding alcohol? Well what I do is first make the non alcoholic version , then I pour out some of it into another pitcher and spike that. That way the whole family can enjoy the punch without having to make another batch. Which by the way you may end up having to make anyway, especially on one of those hot Summer days.
