They often say necessity is the mother of all inventions or in this case we will say preservations. Here I was looking at the celery growing in our garden and it suddenly occured to me that we actually have way more than we can consume and give away. As a result I have been researching ways to preserve our harvest and that is how I discovered how to dehydrate celery.
Of course they are many other ways of accomplishing our desired goal, however I chose this method as it seemed to be the easiest and least time consuming. Besides dehydrating produce always allows you to store a lot more, since the volume is drastically reduced throughout the process. We will be able to use our dried celery in soups, stews, casseroles as well as many other recipes throughout the year.

Here’s What You’ll Need:
- fresh celery
- sharp knife or slicer
- chopping board
- food dehydrator
- air tight containers or jars
- labels
- markers
- v-slicer (optional)
Step By Step Instructions
Step 1.
As always make sure you give your fresh produce a
good wash before you begin the whole process.
Step 2.
I don’t have a slicer in my kitchen so I just chopped my
stalks into about half inch thick slices using a sharp knife.
Step 3.
The slices are then loaded onto the dehydrater
trays and ready for processing.
Step 4.
You want them to be crispy when done, therefore
leave them in there for about 10 to 12 hours.
Step 5.
Store in air tight containers or jars.
Do not forget to mark and label your jars with the type of produce, as well as the dehydration date (DD). Generally speaking you should be able to fit at least two whole plants into each pint jar. Talk about space serving long term preservation, and it is super simple too. You gotta love it! Store your jars in a cool dry place.
