Grilled Huli Huli Chicken Recipe

If you are familiar with Hawaiian words, then you probably have already figured out that this recipe is from down there. I was looking for recipes to add to my BBQ Rolodex in anticipation of Summer, which already includes this homemade barbecue sauce recipe and the Mexican street corn recipe. When I ran into the grilled huli huli chicken recipe, I just knew I had to try it.

The recipe seems easy enough, but after reading some of the comments from others who have tried it, many have failed. It looks so delish, I refuse to fail. Even if I have to try it a few times to get it just right… hopefully not. I will use chicken breasts instead of the thighs and serve them with rice, grilled pineapple slices and have some green onion slices on the side too.

Here’s What You’ll Need:

  • pineapple juice
  • brown sugar
  • ketchup
  • reduced-sodium soy sauce
  • chicken broth
  • minced fresh ginger
  • minced garlic
  • boneless skinless chicken thighs or breasts
  • medium mixing bowl
  • whisk
  • ziploc bags
  • cooking oil
  • paper towel
  • long tongs
  • sliced pineapple (optional)
  • sliced green onion (optional)

Add your garlic, soy sauce, brown sugar, broth, ketchup and pineapple juice in the bowl, and whisk until everything is mixed well. Remove about one and a third cups of this marinade and save it for basting. Cover with plastic wrap and keep in your fridge. The rest of the marinade is divided equally into two ziploc bags.

Put half the chicken thighs or breasts into each bag, seal and give it a good shake to completely coat your chicken. Place the bags in the fridge overnight. The next day prep your grill racks by coating them with cooking oil. Then grill your chicken for up to 8 minutes on each side. The last 5 minutes are the perfect time to baste your chicken. Hmmmmmm… aloha! 🙂
