I really would love to cook more fish, but most of the time I don’t have any to cook around here. When it is salmon season we do smoke some salmon , honey mustard salmon recipe and the rest of it we end up canning. A friend visited us this weekend and she brought some tilapia which I ended up making this sauteed tilapia with garlic herb butter sauce.
I know it is a mouthful of a title, however there is a lot of wholesome ingredients that go into it too. Nevertheless, it is still a quick and easy recipe ready in less than 20 minutes. The recipe calls for unsalted butter, but I am sure any butter will do. Also, instead of the canola oil, I opted for my usual olive oil. This recipe will comfortably feed 4 hungry mouths.
-------------------------------------------------------------------
Here’s What You’ll Need:
- unsalted butter
- flat-leaf parsley
- garlic clove
- shallots
- Dijon mustard
- prosciutto
- freshly squeezed lemon juice
- salt
- freshly ground pepper
- canola oil
- skinless tilapia fillets
- lemon wedges
- large non-stick skillet
- mixing bowl
- spatula
In a mixing bowl add your lemon juice, prosciutto, garlic, parsley, shallots and the Dijon mustard. Season with salt and pepper, mix well and let the bowl sit on this side. Meanwhile heat the oil in your skillet on medium heat. Your tilapia fillets must be seasoned with a little salt and pepper and then added top side down to the skillet.
Cook for about 4 minutes or until they turn a deep golden brown underneath. Grab the spatula and carefully turn over each fillet. It is now time to spread the butter mixture on top of each one. Allow to cook for another 2 or so minutes, the butter mixture should melt into the tilapia. Don’t forget to serve with some lemon wedges.
