When it comes to fish, one of my personal favorites has got to be salmon. Prior to this blog post, I think the only other time I have mentioned twice, once when we smoked salmon and then we were canning salmon. Anywho, today I have decided to share this honey mustard salmon recipe. More salmon recipes will follow, in the coming months.

This easy and delicious salmon recipe, is actually also gluten free. Yay! Ready in less than 30 minutes with prep time about 7 minutes, followed by around 18 minutes cooking time. For the die hard mustard fans, feel free to add more mustard and cut back on the honey. For fans of the grill, guess what? Yes, that’s right! You can cook on the grill instead of using the oven.

Here’s What You’ll Need:

• salmon
• fresh parsley leaves
• whole grain mustard
• honey
• garlic
• fresh lemon juice
• smoked paprika
• kosher salt
• black pepper
• aluminum foil
• small bowl
• baking sheet
• cooking spray

Preheat your oven to 375 degrees F. Mix the mustard, honey, garlic, lemon juice, paprika, salt and pepper in the small bowl. Whisk well to make the honey mustard sauce. Line your baking sheet with the aluminum foil, and apply a layer of cooking spray. Place the salmon in the center of the baking sheet and then cover the top with an even layer of the sauce.

Enclose the salmon within the foil by folding the sides over the top. Bake in the oven for up to 15 minutes. How long you bake your salmon, will depend on the thickness. Remove from the oven and carefully pull open the foil to expose the fish. Return to the oven and broil for about 3 minutes. Keep an eye on the salmon, or you may burn the sauce. Serve with salads, potatoes, pasta, rice, lentils, sauteéd greens, roasted veggies and more.
