Give me a salad without cucumbers, and I will throw my puzzled look face at you. It doesnt help that you can just pick these from the garden, give them a quick wash and start enjoying them right away. You remember when I showed you how to dehydrate celery and how to dehydrate bell peppers? My new thing is now dehydrating cucumbers, that way I can preserve them for winter consumption.
I am actually going to take this further and attempt to dehydrate cucumbers using the sun, however for the sake of this post we will be using the trusted food dehydrator. The later is faster, but I feel like the natural way will preserve way more of the nutrients. The process itself is simple, just the slicing may take a while, especially if you are doing a large batch. Dehydrated cucumbers can be enjoyed as chips, in soups and of course in your salads.

Here’s What You’ll Need:
- fresh cucumbers
- chopping board
- sharp knife
- food dehydrator
- air tight jars or container
- large bowl
- spices or seasonings (optional)
Step By Step Instructions
Step 1.
Wash your cucumbers and them cut into thin slices.
Step 2.
Lay them out flat on your dehydrator trays in single layer.
Step 3.
Run the dehydrator at low setting for vegetables for
about 8 to 12 hours. They should be crispy when done.
Step 4.
Store in an airtight container.
Some people like to peel their cucumbers before they dehydrate them. I have always enjoyed the outer skin of the fresh ones, so I just slice mine. Also feel free to remove the seeds, if you like. They do add an extra crunch to the chips when you much on them though. You can also slice them into halves or quaters and even add spices for different flavors, just do what works for you, alright! 🙂
