It’s summer time, therefore we try to keep things sweet, bright and juicy around here. I hope you are enjoying the homemade natural vitamin water or the homemade fudgesicles . I am pretty sure you enjoy eating chunks of fresh pineapple, but have you ever tried lacto-fermented pineapple salsa?
There is just something about these fermentation recipes, that turns fresh fruit and veggies that you already love into something you become addicted to. Don’t worry even if you don’t have the fancy equipment you can still make some, using ordinary canning jars. If you are still not a fan of fermentation, stick around I will make you a believer one of these days. LOL
Here’s What You’ll Need:
- pineapple
- cilantro
- green onions
- red jalapeno
- sea salt
- whey or water kefir
- water
- sharp knife
- cutting board
- medium size bowl
- fermentation jar kit (optional)
- canning jars
Wash your veggies, preferably under running water before prepping them as instructed. The pineapple has to be peeled, cored and then diced. The ingredients are mixed together in the bowl before transferring to the jars. The advantage of using the correct fermentation tools is that you do not have to remember to open the lid every few days as with the ordinary canning jars. Depending on how you like your salsa, it should take anywhere from 48 to 96 hours to be ready.
