Cauliflower Fried Rice

Run out of rice in your kitchen? Well here’s an awesome alternative that tastes just as good, if not better. You know I like to try Asian cooking from the homemade egg rolls, homemade teriyaki sauce and even the homemade noodles. Instead of making the traditional chicken fried rice, I thought why not try this cauliflower fried rice instead.

This recipe will be ready in half an hour, 20 minutes preparation time and 10 minutes actual cooking time. This year we had a good cauliflower harvest, so I have been trying a lot of recipes that include it. Not only is cauliflower loaded with nutrients, it is also Paleo diet friendly, gluten and dairy free. Are you ready to make a batch, here goes…

Here’s What You’ll Need:

Wash and clean your cauliflower heads, before coring them. The middle stem must be removed as well, then you can go ahead and chop into large chunks which will go into your food processor. Process with a chopping blade until your cauliflower looks like rice. Transfer your riced cauliflower to the bowl.In your saute pan, heat up the coconut and sesame oil.

The cauliflower, scallions, and carrots follow with a little salt and pepper to season. Saute for at least 6 minutes, your veggies should be coked and crunchy when done. The garlic and ginger go in next, then the eggs. If you are adding meat, it will go in once the egg has been infused into the rice. The coconut aminos or soy sauce goes in last. Give everything one good stir before serving.
