Since we moved out of the city and started living off the grid, we do not get to host and parties or soirees anymore. That doesn’t stop me from making little party appetizers ever so often such as the bell pepper nacho boats recipe or the homemade cinnamon rolls recipe. Today, I am going to share this stuffed mini peppers recipe in this post.
They are often referred to as party poppers, and with great reason too. When you drop one of these into your mouth, be prepared for that ‘pop’ of flavor that usually follows. I really like the blend of the sweet and spicy flavors, that are unleashed by these little guys. I have heard you can make some using jalapeno peppers instead, but those would be for my dear husband to try. LOL

Here’s What You’ll Need:
- sweet mini peppers
- cream cheese
- bacon
- jalapeños
- shredded sharp cheddar or pepper jack cheese
- chives or green onions (optional)
- baking sheet
- aluminum foil
- large knife
- medium bowl
- small spoon or spatula
The cream cheese has to be at room temperature for at least half an hour, to make things a whole lot easier for you. I call this the ‘small window of opportunity’ and use it to prep the rest of the ingredients. The bacon needs to cook in the oven, the mini peppers need to have the seeds removed from inside, the jalapenos diced and the cheddar cheese shredded. 🙂
