Bell Pepper Nacho Boats Recipe

Some days, especially when you been working hard on the homestead, I do not feel like spending too much time in the kitchen making dinner. Over the years I have accumulated a few go to recipes for quick dinners like the philly cheese steak panini recipe. This skinny bell pepper nacho boat recipe, is also another family favorite.

I love this recipe, as it is a healthier take on the popular nacho recipe. Instead of using tortilla chips, you use bell peppers instead. It works pretty well for me, especially when my garden is at its peak. I just pick a few peppers, head into the kitchen and within a few minutes… dinner is served. LOL

Here’s What You’ll Need:

First of you have to wash your peppers and then core them, making sure you remove all the seeds. Then you carefully slice them into 6 pieces per pepper. Cook your ground meat over medium heat until its cooked, then carefully remove any of the fat. Don’t forget to preheat your oven to 375 degrees F.

Add all you spices to the ground meat, and mix everything well together. Use a spoon to transfer the mixture to your pepper slices, and add some grated cheese on top on each one. Lay down some parchment paper in your baking sheet and bake the boats for at least 10 minutes. You know they are ready when the peppers are hot and all the cheese on top has melted. These are really delish, try them! 🙂
