Cinnamon Roasted Sweet Potatoes Recipe

Don’t you just love it when the simplest of recipes, awaken your taste buds. For me, sometimes I am exhausted and have very little time to prepare meals. So when I find a recipe like the one pot seafood pasta recipe and the bell pepper nach boats recipe that my family loves, I get super excited. On my never ending search for such recipes, I ran into this cinnamon roasted sweet potatoes and cranberries recipe.

We already know as far as carbs are concerned, sweet potatoes are in the friendly low carb category. If you have tasted the Cinnabons, you will understand why this recipe works. There is just something about combine the sweetness and the spicy of the cinnamon that triggers and explosion of flavors inside our mouths. Only 6 ingredients are required for these recipe, a little preparation time and you let the oven do the heavy lifting.

Here’s What You’ll Need:

I know I said the recipe is quick, however there is a little prep work that is needed. Washing all your ingredients and then chopping the sweet potatoes into chunks. How long that will take you, will depend on how fast a chopper you are, it shouldnt take more than 10 minutes though. I often forget to preheat my oven, which often increases my cooking time. Don’t be like me. LOL

With your ingredients ready, all that is left to do is mix everything together, place on the baking sheet and in the oven. Let them sit in there for 50 to 60 minutes and they should be ready. I have found the best way to test if they are done, is using the ‘fork test’. If you can easily poke a few of them with a fork, you can remove from your oven. Simple, huh?
