Canning Sweet And Sour Chicken

Let’s get canning, shall we? This time we won’t be just canning green beans, canning carrots or canning asparagus alone. We taking it a step further and choosing to can an actual ‘meal’. What on earth am I talking about? Well actually, by the end of this post I will have you canning sweet and sour chicken.

Of all the chicken recipes I have tried, I think I really like the sweet and sour ones. Maybe it is the mix of the sweet and sour that gives it that edge, I don’t know. Altogether this recipe calls for 4 main ingredients only, and since we will be canning meat, your pressure canner will be needed for the job. Just as well, it has been a while since, I dusted off mine. LOL

Here’s What You’ll Need:

First things first, make sure that you wash and then sterilize your canning jars. Keep your jars, lids and rings warm while you prepare the rest of the ingredients. Wash and dice your bell peppers and onions. The chicken also has to be cooked and then shredded. Now you can start layering your prepped ingredients in the jars.

Prepare the sauce in a saucepan by combining the pineapple juice,brown sugar, white vinegar,soy sauce, ketchup and ginger. Switch on the heat to medium so you can bring everything to a boil whilst continuously stirring. When the sugar dissolves you can pour the sauce into the jars covering the other ingredients.

An inch of headspace is recommended for each jar, remove any air bubbles and wipe the rims before screwing on the lids. Process in your pressure canner at 10 lbs of pressure for an hour and a half. Leave to cool and seal on the kitchen counter or table.
