Here’s What You’ll Need:

Wash your vegetables, then core, peel and core them. The onion should be diced and your jalapeno seeded the chopped. They all go into the large stainless steel pan, mixed well before the vinegar is added. Before bringing to a boil for about 45 minutes, add the sugar and the canning salt.

Wash and sterilize your jars so that they are ready for canning when your rotel is ready. Funnel the mixture into the jars and add a teaspoon of lemon juice. Leave just about an inch of headspace in each jar. Wipe of the rims of each jar before screwing on the lids. Processing is done in your water bath canner for 15 minutes, remove and allow to cool and seal overnight.
