Ok, so just because I now live on the homestead does not mean that I cannot keep up with current trends, especially when we still have access to the internet. So the other day I was introduced to microgreens, which are just tiny versions of vegetables you already grow in your garden. I have since been researching on how to grow microgreens.
All you need is a little space in your kitchen or greenhouse. However, unlike sprouts you will als0 need some soil. The best type of plants to grow are those that are edible from root to leaves like spinach, lettuce, beet, cabbage, kale and radish. As microgreens they will have concentrated nutrients as much as five times more than mature plants and a high volume of enzymes that are good for your health.

Here’s What You’ll Need:
- microgreens seeds
- organic soil
- shallow tray
- mist spray bottle
- kitchen shears
- grow light (optional)
- warming mat (optional)
Locate a sunny window in your house, preferably in your kitchen to set up your ‘garden’. Fill the shallow tray with about an inch of the soil and even it out. Then you simply sow as many seeds as possible on the surface, if you want to speed up sprouting you can soak the seeds overnight.
Cover seeds with another layer of soil, before watering with a mist bottle. Repeat the misting a few times a day in order to keep the soil moist. Expect to harvest within 7 to 21 days, just use kitchen shears to clip the microgreens above soil level. Serve as garnish for your dishes or in salads.
