In most cases when we think of canning, there are fresh goods involved. For example, in previous posts we have looked at canning raspberries, canning crisp apple slices and even canning pears. So I decided to try something different, how about canning dried soaked beans.
First of all, you will need to dust off the pressure canner for this one. Also, you can pretty much preserve any type of beans using this recipe. You can even mix and match a few different types of beans in your jars. When it comes to making your meals, then any meal that requires beans can use your canned beans. Anything from tacos, chili, burritos, hamburger soup, salads and more.
-------------------------------------------------------------------
Here’s What You’ll Need:
- tomato sauce
- dried onion
- chili powder
- jalapenos
- salt
- cumin
- black pepper
- garlic powder
- soaked beans
- canning jars with lids
- canning utensils
- pressure canner
- kitchen towel
- saucepan
Boil some water in a saucepan. Meanwhile fill all your jars with the dry ingredients. Pour the hot water into the jars leaving an inch of head space. Wipe all the rims with the towel and then screw on the lids. The rings must also be tightened.
For your quart jars, you can process them at 10 pounds of pressure for 90 minutes. Pint jars only require 75 minutes processing time. Let the canner sit an cool down, before opening the lid. Lift the jars out onto the counter and leave them to cool. Store in a cool dry place.
