Canning Peach Pie Filling

Don’t you love nice ripe juicy peaches? I do, I do, but what I don’t love is that their shelf life is usually very short. So we have to resort to things such as canning or freezing them. You can even go further by canning peach pie filling.

You will need your water bath canner for this process. Your preparation time is about an hour, and then cooking and canning time is about 30 minutes. Altogether it should take you about one and half hours to can approximately 7 quarts using this recipe.

Here’s What You’ll Need:

  • peaches
  • white sugar
  • clear jel
  • cold water
  • cinnamon
  • almond or vanilla extract
  • lemon juice
  • water bath canner
  • canning jars
  • canning utensils
  • large pot
  • kitchen towel

Before you can begin making the pie filling your peaches have to be cored, peeled, sliced into about half inch slices and blanched. The sugar, clear jel and cinnamon is combined in a large pot with the water as well as the extracts. Allow the mixture to cook over medium heat until it starts bubbling and thickening.

The lemon juice goes in next, then you cook for 1 minute before adding the prepared peaches and cooking for another 3 minutes. Fill your jars up to an inch below the rim, make sure they are warm. Remove any air bubbles, before wiping the rims and screwing on the lids.

The processing time in the water bath canner should be about 30 minutes. Use the tongs to carefully remove the jars and place on top of a kitchen towel on your counter. Allow them to cool and seal, you should hear popping sounds as they do this. Store your jars in a cool dry place.
