We have now reached that stage as gardeners, were we are harvesting way more bell peppers than we can eat or give away. In the past I have resorted to dehydrating them, as it is a space saving way to preserve them for long term use. I think this year, I am going to try something a little different though. I have been researching how to freeze bell peppers on the internet.

If you are still reading, it probably means that you are dying to know what I discovered. Well if you know me well then you know I like to stick to the simple stuff. The method I chose is not only easy, but is super fast too. Of course the time taken, will depend on how many bell peppers you plan on freezing. Also this method does not require you to blanch before freezing, I know some people have issues with the whole blanching process.

Here’s What You’ll Need:

• fresh bell peppers
• knife or scissors
• chopping board
• baking sheet
• ziploc bags
• marker

Before freezing your bell peppers make sure that you wash them well. They will need to be diced for packing, this is where your knife and chopping board are handy. However, Alea actually shares a pretty cool method for dicing your peppers, which I found not only faster but easier than using the knife. See the link below for full details.

Oh and yes, you can freeze all types of bell peppers using this method. So far I have tried it with green and chocolate bell peppers and it worked well. Don’t be like stubborn me, I packed more than I use when cooking, now it is almost impossible to thaw just what I need and leave the rest frozen. You live and learn. LOL. Label your bags with the frozen date too.
